Right now you can create 12 personalized categories within an eBay store.

plus the "Other" category which you can't rename - its locked in....

sure do, its one of the fields you fill in during the listing or editing process once you have a store open.
It only shows up if you have a store open.

You also indicate an eBay category when you list in Stores. That puzzled me at first until I realized that the number of store items you show for a particular category will determine your pecking order in the listing of stores with items for sale in that category.
The link to that listing is on the last line in the left column when you browse eBay auction categories/subcategories.

*available ebay stores* will also show on a google search. For instance antique linens will show a link to that page of stores which is also ranked from most items listed in that category down. This list has been on page one or two on a google search sometimes (and sometimes way way farther down).
