How do you change the store category of a currently running listing?

If it doesn't have any bids, just revise it. Go to the page where you list your starting bid, picture, etc. and change there. If it's already got a bid it can't be changed.

It's in the "edit pictures & details" section. You should see a block with a drop-down list that offers your choice of in-store categories.
