My insurance is better than hers.

My wife took on a new full-time job that has a high monthly co-pay for medical insurance. She had the option to opt-out of her coverage since she is covered under mine [which she did]. My company told me she has to sign up for her own coverage and they would not pay any bills incured by her. My question is can they force her off my insurance, and if so can they do this back to her date of hire since she wasn't eligible for coverage for the first three months of employment or do they have to cover that time frame?

You are wrong.
It is quite legal, and it is becoming quite common, for spouses who have access to their own coverage to be excluded from eligibility, even if spouses to do not have access to their own coverage are covered.
Keep in mind that except in Hawaii, an employer is not obligated to provide health insurance AT ALL, let alone to dependents.
